Abstract

This article presents key points to sharpening a knife. It provides information on metal differences, sharpening abrasives, blade shapes, cutting edge angles, determining when a cutting edge is sharp, finishing and testing the cutting edge, proper use of a steel to maintain the cutting edge, proper use of a steel to maintain the cutting edge, and knife safety. Other topics included are manual and motorized sharpening systems, and how to build a knife sharpener. Diagrams illustrating the key points and sources for supplies are provided in each segment.
