Abstract

Beef quality assurance has become an important issue in recent years because consumers demand a safe
and wholesome food supply. The purposes of this paper are to define beef quality assurance, discuss the quality issues encompassed in a beef quality assurance program, and discuss the role of veterinarians in cow-calf quality assurance programs.
